Winter Squash – Heart Warming Soup Recipe

The picture above is of the bounty of squash I received from my last farm basket. Yes there is a spaghetti squash (summer squash) in the photo. Ideally I would have had a butternut squash in the photo instead.

Today I want to share with you a delicious winter squash recipe.

The recipe is easy but peeling and chopping the squash is not. Feel free to cut the squash in half and roast ahead of time to make them easier to peel and chop. I wish I would have done that. Next time!

Ingredients

Instructions
  1. Heat the ghee in a large soup pot and sauté the onions and garlic until soft.
  2. Add the spices and cook for a few minutes.
  3. Pour in the vegetable broth and add the squash chunks.
  4. Bring to a boil and reduce to a simmer for about 30 minutes. Ensure the squash pieces are soft.
  5. Let the soup cool and stir in the coconut milk.
  6. Using a hand blender, blend the squash mixture until smooth.
