(Spring) Recipes Round-up of the Month!

Spring has finally arrived in our neck of the woods and that signals moving away from warming comfort foods. This past month I’ve been trying out some lighter recipes. Here are 4 of the recipes I’ve tried that are definitely worth sharing!

Breakfast Cookies

I wanted to make something that would go great with a cup of coffee or tea first thing in the morning. These breakfast cookie are perfect. They are not too sweet and feel substantial enough to keep me going until I can sit down for a proper meal.

Blueberry Scones

I have a thing for scones and I’ve been making them all winter but I really wanted to make some with blueberries. This recipe is unusual because it calls for almond butter but it made the scones moist and chewy instead of dry and crumbly.

Coleslaw

We’ve been eating a lot of sautéed cabbage and apples and it was time for a change. I still wanted to keep cabbage on our menu because it’s both nutritious and economical. Since the snow has disappeared I thought it was time to make coleslaw. This recipe is simple, easy and delicious.

Butter Pecan Ice-cream

We adopted an ice-cream maker this winter but we really haven’t used it much. On a warm, random Wednesday my husband decided to try out this recipe. It’s pretty much heaven in a bowl!  Scoop it all out of the ice cream maker as soon as it’s done or else it will harden too much to enjoy.
