Creamy Slow Cooker Taco Chicken (Dairy and Gluten-free, Paleo)
I have yet another super easy and delicious slow cooker recipe to share with you. This time it’s Mexican themed.
I love Mexican food and tacos have to be one of my favourites. Creamy Mexican food typically contains sour cream and since I cook dairy-free fare, I thought I would try using coconut milk instead.
Coconut milk is a staple at our house. It goes into our curries, soups, ice-cream, smoothies and my coffee. It’s seriously delicious and is a fabulous substitute for cream if you don’t tolerate dairy or are allergic to it.
This recipe also uses homemade taco seasoning instead of the premixed spice packet so you know exactly what you are eating. Have you read the back of a taco seasoning packet lately?
Measuring out the spices only takes a couple of minutes and the recipe has no chopping so you’ll have it prepped in less than 10 minutes! How great is that?
We ate the Slow-Cooker Taco Chicken with rice and some roasted cauliflower. You could do roasted potatoes and sautéed spinach. Lots of combination to try!
