Satisfying Summer Salad

In the summer I love having salads not just for lunch but for dinner too. Salads can get boring so itís important to change up the veggies, protein and salad dressing you use.

Itís really fun when you are able to mix different colors together to make your salad extra appealing. Choose seasonal and local produce for maximum flavour.

We really like the combination of snap peas, yellow tomatoes, cucumbers and purple cabbage with an Asian dressing. Throw on some leftover grilled steak and youíve got a delicious and satisfying dinner.

I think making your own salad dressing is the perfect way to up-level your salads. All you really need is some good quality oil, vinegar or citrus juice, a glass jar and some imagination.

I canít take credit for this summer salad or the Asian Vinaigrette recipe. My husband loves to browse Epicurious and tweak recipes to suit his tastes and match the ingredients we have on hand.

All I did was snap a few photos and shower my husband with complements while devouring his creation. Yes, I am a lucky woman.

  1. Place all the ingredients into a jar and shake. That's it!

*Add pinch of crushed chilli if you like a little heat.

Pour dressing over your seasonal veggie salad with thinly slice steak and enjoy!
