Easy No Bake Recipe

I love to bake but cooking always seems to take priority lately. When faced with preparing the next day’s meal or baking a batch of cookies, the meal wins out. It makes sense because I can’t really serve my family cookies for dinner.

When I really start to miss baking but am crunched for time I like to make no-bake bars. They are quick and easy to make with a food processor. The recipe below is for pecan coconut bars which fits the following criteria: gluten-free, dairy-free, egg-free, paleo.

I seriously don’t know what I would do without my food processor. Actually, I do. I would be spending way more time in the kitchen needlessly chopping nuts and vegetables. If you want to find out the other time-saving kitchen tools I love, watch this video.

Okay, these bars are seriously decadent. They remind me of eating a Reese’s Peanut Butter Cup. They are surprisingly sweet for only using one tablespoon of honey. I’m sure the dark chocolate chips are what elevates the bar’s taste. This recipe was inspired by The Paleo Mom’s Almond Coconut Bars.

Instructions
  1. Place pecans into your food processor and pulse until nuts are chopped finely but don’t overdo it or you will end up with pecan butter.
  2. Add the rest of the ingredients except for the chocolate and pulse until the mixture is well combined. It will look wet.
  3. Pour the mixture into a 9×9 pan lined with parchment paper. Place the pan into the fridge for 90 minutes to firm it up.
  4. Once the bars are firm, melt the chocolate chips on the stove top on low. Drizzle the melted chocolate over the bars and quickly smooth out the chocolate.
  5. Pop the bars into the refrigerator for 10 minutes to let the chocolate harden. Cut them before the chocolate completely hardens to avoid the chocolate cracking.
Recipe Notes

Don’t worry if the bars crack or crumble a little. They still taste amazing!

Bars can be kept in the refrigerator or the freezer. Enjoy!
