September Muffin Mania
Looking for a portable snack to throw in your gym bag or your kid’s lunch box? Muffins made from nutrient dense ingredients like eggs, coconut flour, nuts and fruit make a fantastic low sugar snack. I love to bake up a double batch and keep them in the freezer.
I thought I would share my two favourite muffin recipes with you. There are a lot of wonderful muffin recipes out there but the two I’ve selected are low in sugar, gluten-free, dairy-free and tasty. The first recipe (pictured above) tastes like banana bread but cooks in half the amount of time. To make this recipe dairy-free I substituted coconut oil for the butter and they turned out beautifully. The second recipe comes from Wellnessmama.com which is one of my favourite blogs. These muffins are moist and flavourful and taste like spice cake.
