Mint Chocolate Chip Ice Cream Recipe

Summer is in full swing so that means ice-cream at our house.

A few months ago we adopted an ice cream maker from a friend that wasn’t using it and wanted to find it a good home. We are taking great care of it and are being mindful not to overuse it. We have tried various flavours like vanilla and butter pecan but we hadn’t tried anything with mint.

I was flipping through the June/July issue of Paleo Magazine and I stumbled across a recipe for Mint Chip Ice Cream. It sounded delicious but I was missing 4 of the ingredients.

I REALLY wanted to make the ice cream so I did some substituting and omitting.
The end result was the creamiest ice-cream with a mild mint taste.

Perfection in my books! I think the avocado was the secret ingredient. It gave the ice-cream a beautiful green colour and a creamy texture. I should also mention that I used edible peppermint essential oil that I picked up at The Light Cellar. I usually use it for chocolate making but it totally works for ice cream. The original recipe calls for peppermint extract so don’t let that stop you from making some.

This recipe is quick and easy. You just need a blender and an ice-cream maker. If you don’t have these appliances, you seriously need to consider getting them. I know, more kitchen appliances but this one is so much fun!

Ingredients

Instructions
  1. Place all of the ingredients, except for the chocolate chips in a blender. Blend until completely smooth.
  2. Pour the mixture into your ice cream and follow the manufacturer’s directions. Add the chocolate chips in when the ice-cream is almost done.
Recipe Notes

It’s best to eat the ice-cream immediately but you can freeze it. You will need to thaw it for 20 minute because it gets quite hard.
