Paleo-friendly Grain-Free Granola

This recipe was inspired from Pierre Lamielles’s granola recipe and a conversation with Dawn Krpan. I attended a Paleo cooking class that was put on by Pierre, Dawn and Ken Adrukow at The Cook Book Company. Pierre has also written and illustrated a beautiful cookbook called “Kitchen Scraps.” It’s packed with humour and splurge worthy recipes for a treat meal or dessert for those who can tolerate ingredients like dairy and grains. Ingredients

Instructions
  1. Pre-heat oven to 250 degrees and line 2 cookie sheets with parchment paper.
  2. Mix all dry ingredients into a large bowl.
  3. Whisk two eggs in a small bowl and then add all of the wet ingredients.
  4. Once the wet ingredients are blended, pour them over the dry ingredients and mix until well combined. It’s going to look clumpy.
  5. Spread the mixture on your two cookies sheets and bake for 60-70 minutes until golden brown. It’s important to stir the granola every 15-20 minutes so that it bakes evenly.
Recipe Notes

Cool your granola and then add some dried fruit if you like. I usually put in some raisins.

Serve in a bowl with almond or coconut milk. Seasonal berries or sliced bananas make a great topping.
