Butternut Squash Soup!

 

I love creamy soups but dairy doesn’t agree with me these days. Coconut milk to the rescue! I created a butternut squash soup recipe after getting inspired by a soup recipe from Everyday Paleo by Sarah Fragoso. Enjoy!

Ingredients

Instructions
  1. Take out a large soup pot. Sautee onions in olive oil until translucent.
  2. Add the spices, squash, stock and bring to a boil.
  3. Simmer on low until squash is soft.
  4. Remove from the heat and add the coconut milk. Using a hand blender, blend the soup until smooth.
Recipe Notes

Top with chopped walnuts for some crunch and omega 3 fatty acids.
