I’ve been on a serious no-bake healthy treat kick lately. Normally, I bake about once a week but I just haven’t had the time. I don’t want to resort to buying expensive processed snacks so “no-bake” treats are the solution for me. Blend and chill and you are ready to go. It doesn’t get any easier than that!
These Chocolate Coconut No-Bake Treats or as I call them C.C. Love Bombs are full of fibre(coconut), healthy fat(coconut oil) and antioxidants(cacao powder and nibs). I love the combination of chocolate and sea salt. The cacao nibs also add a nice crunch.
Valentines’s Day is coming up and these Chocolate Coconut Love Bombs would make a perfect gift for someone special. Your kids could even make these with some help. Instead of eating the sugary valentine’s treats from the store, whip up some C.C. Love Bombs and avoid a nasty sugar crash.
1/4cupcacao nibs (mini chocolate chips would work)
Place all of the ingredients into a food processor except for the cacao nibs and blend until well combined. The mixture will be very moist.
Add the cacao nibs and pulse a few times to blend them in. The cacao nibs add a nice crunch so don’t over blend them.
Line a couple of cookie sheets with parchment paper. Scoop and drop a heaping teaspoon of the mixture onto the cookie sheet. Place your cookie sheets in the freezer for 10 minutes to firm up the goodies.
