This is my “go to” crock-pot recipe. We all love curry at our house so I rotate yellow, green and red to save us from boredom. Yellow curry is the mildest and red curry is typically the hottest.
Today I’m going to share a mild yellow curry recipe done in my favourite time saving kitchen appliance, the crock-pot. I usually use boneless, skinless chicken thighs and whatever vegetables I have on hand. This week it was onions, leeks, carrots and parsnips. You can serve this curry over rice or roasted cauliflower.
