Easy Crock-pot Chicken Curry Recipe

This is my “go to” crock-pot recipe. We all love curry at our house so I rotate yellow, green and red to save us from boredom. Yellow curry is the mildest and red curry is typically the hottest.

Today I’m going to share a mild yellow curry recipe done in my favourite time saving kitchen appliance, the crock-pot. I usually use boneless, skinless chicken thighs and whatever vegetables I have on hand. This week it was onions, leeks, carrots and parsnips. You can serve this curry over rice or roasted cauliflower.

  1. Combine all of the ingredients into your crock-pot and cook on low for 6-8 hours. That's it!
