Banana Nut Oat Bars

If you are like me, you always seem to have bananas on your counter that are past their prime. You could freeze them but wouldn’t it be nice to transform them into a scrumptious but healthy baked good?

These moist and chewy Banana Nut Oat Bars make a delicious snack and taste fantastic with a cup of coffee first thing in the morning. I love making bars because they aren’t fussy and they cook much quicker than loaves. Simpler is better in my books.

Bananas are such a great natural sweetener. What’s your favourite use for ripe bananas?

Ingredients

Instructions
  1. Preheat your oven to 350F and grease an 8"x 8" baking pan with coconut oil.
  2. Combine all of the ingredients together in one large bowl. Stir until well mixed.
  3. Spoon the batter in the baking pan and gently pat it down.
  4. Bake for 25 minutes or until the top is slightly golden and the edges starts to pull away.
Recipe Notes

Cool before slicing. Store the bars in the fridge.
