Almond Butter Date Balls

Looking after our baby continues to keep me on my toes. I find that I’m still relying on snacks to get me to my next meal. Every outing and errand seems to take longer than expected so I am trying to make it a habit to keep a snack for me stashed in my bag. If I don’t then I am tempted to stop and pick up a sugary, processed, baked good from a coffee shop. Yes, I’m a cookie monster!

In the past I’ve recommended Lara Bars as a great portable snack to keep in your gym bag or purse for snack emergencies. I still love Lara Bars but I wanted a cheaper alternative. I did a little experimenting in the kitchen and came up with Almond Butter Date Balls. The dates contain filling fibre and the nuts provide healthy fat too keep you fuelled until your next meal. Dried dates are high in natural sugar so they should be consumed when you have an active day or want a healthy treat.

Ingredients
Servings: pieces/balls
Instructions
  1. Place dates in food processor and blend.
  2. Add the almond butter, almonds, coconut and cinnamon and blend until well combined.
  3. Form small bite-sized balls and place them on a piece of parchment paper.
  4. Chill them in the refrigerator for an hour. Makes about 12-16 balls.
